Blackening originated in 1980 and is commonly
associated with Cajun cuisine.
It is a technique developed by Chef Paul Prudhomme, he would dip Meats in melted
butter, sprinkle with herbs & spices then cook on a very hot cast iron skillet giving it a nice Char... hence "Blackening"
